Can I associate a sales person with a particular invoice?

Yes, you can associate sales person with an invoice. For that you need ledger with label Sales Man or you can create new salesman at the time of sale transaction.
Go to Transaction > Sale
Fill the transaction details.
At the bottom left corner Sales Man field is present.
Select / Create new Ledger with label salesman.
Click on OK/Apply button.
